Ingredients
- Sugar 0 lbs
- Butter 0 oz
- 3.2% Milk 5 fl oz
- 10% cream 5 fl oz
Step-by-Step Guide
Step 1
Melt the butter. Add the milk and cream to the container with the butter and bring to a boil.
Step 2
Slowly add the sugar to the boiling milk and cream mixture. Do not add all the sugar at once; divide the kilogram into several portions to allow the sugar to dissolve properly.
Step 3
Simmer the sugar in the mixture over the lowest heat, stirring constantly. After about 20–30 minutes, the sugar will start to thicken and darken by half a shade. At this point, check its readiness. To do this, scoop some sugar with a spoon and drop it onto a very cold plate. If, after 10 minutes, the sugar forms a dry, slightly crunchy ball, it is ready. If it remains a sticky toffee-like consistency, continue cooking, but be careful not to overcook it, or it will lose its creaminess and turn into dry sugar.
Step 4
Pour the sugar into small silicone molds or cool it as a large disc on a tray. Later, you can break this disc into pieces with tongs and place the sugar into a sugar bowl.
