Creamy Rice Pudding
Ingredients
- Long-Grain Rice 5 oz
- Milk 10 fl oz
- Heavy cream 10 fl oz
- White Beans 1 piece
- Egg white 5 pieces
- Sugar 5 oz
Step-by-Step Guide
Step 1
Rinse and dry the rice, then transfer it to a heavy saucepan. Pour in the milk and cream, and add the vanilla bean (without the seeds). Bring to a boil over medium heat, stirring occasionally. Reduce the heat and let it simmer for 20 minutes, until the rice is soft but not mushy.
Step 2
In a bowl, combine the yolks, sugar, and vanilla seeds, and whisk together.
Step 3
Remove the saucepan with the rice from the heat and take out the vanilla bean. Mix about a third of the rice with the yolks, then add this mixture back to the remaining rice in the saucepan. Use a wooden spatula to prevent the rice from sticking to the bottom. Continue to cook over low heat for a few more minutes, stirring occasionally, until the pudding is thick enough that a spoon can stand in it.
Step 4
Transfer the pudding to bowls and garnish as desired. Serve hot.
