Ingredients
- Pumpkin 5 oz
- Chicken Broth 15 fl oz
- Onion 1 piece
- Garlic 3 cloves
- 10% cream 5 fl oz
- Butter 0 oz
- Semi-soft cream cheese 5 oz
- Dry White Wine 5 fl oz
- White bread 5 oz
- Saffron 0 oz
- Shrimp 6 pieces
Step-by-Step Guide
Step 1
Make croutons. In half of the butter, sauté the garlic, then add the white bread until golden brown. Alternatively, use store-bought croutons.
Step 2
Sauté the shrimp with garlic and salt.
Step 3
In the remaining butter, sauté the garlic and onion until slightly golden, add the pumpkin, then the white wine, and simmer until the pumpkin is tender and the liquid has evaporated. Season with salt to taste.
Step 4
Combine the broth, pumpkin, cream, and blend until smooth. Then heat gently until boiling, add saffron, and dissolve the cream cheese into the soup. Season with salt and pepper to taste.
Step 5
Serve with shrimp and garlic croutons.
