Creamy Pumpkin Soup
Ingredients
- Chicken Broth 15 fl oz
- Butternut Squash 25 oz
- Onion 2 heads
- Garlic 2 cloves
- Nutmeg ¼ spoons
- Cream 3 spoons
Step-by-Step Guide
Step 1
In a large pot, pour in the broth and 500 ml of water, bring to a boil, and add the pumpkin cut into small pieces, along with the finely chopped onion and garlic. Bring it back to a boil, then reduce the heat and simmer for 15 minutes until the pumpkin is tender.
Step 2
Dry all the vegetables, reserving the broth. Place the vegetables in a blender and puree them, adding broth as needed to achieve your desired consistency. Add nutmeg, salt, and spices.
Step 3
Pour the soup into 4 small bowls and drizzle some cream on top in a spiral pattern. Serve with warm bread.
