Green peas, besides their wonderful sweet flavor, have a unique texture that is perfectly suited for pureed soups — thick, velvety, and enveloping. By adding roasted vegetables and a touch of oil, we can slightly soften the sweet pastry-like sweetness of the peas to a more moderate level. Ingredients
- Green Peas 25 oz
- Onion 10 oz
- Carrot 10 oz
- Chinese green beans 0 oz
- Breadcrumbs 0 oz
- Unrefined Sunflower Oil 0 fl oz
- Dry adjika 0 oz
- Salt to taste
Step-by-Step Guide
Step 1
First, you need to smoke the vegetables: peel the carrots and onions, and place them in the oven for a short time.
Step 2
Next, add the broth. Place the vegetables in a pot, bring the mixture to a boil, add 1-2 pinches of salt, and simmer for 15-20 minutes over medium heat until cooked through.
Step 3
Add the green peas. Bring the soup back to a boil and cook for another 2 minutes.
Step 4
Blend the ingredients with an immersion blender until smooth.
Step 5
Sauté the breaded green beans and place them on top of the soup.
Step 6
Drizzle with Kakhetian oil on top and sprinkle with dry adjika.
