Step-by-Step Guide
Step 1
Prepare a broth by boiling the meat, roots, and water, then strain it.
Step 2
Sauté the peas in a small amount of broth until cooked, then pass through a sieve while hot.
Step 3
Toast the flour with part of the butter, dilute with broth, combine with the pureed peas, and bring to a boil. After that, strain, and season with cream mixed with the egg yolk and butter.
