Creamy Mushroom Soup
Ingredients
- Morels 20 oz
- Salad Potatoes 4 pieces
- Onion 1 piece
- Cream 22% 15 fl oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Peel and boil the potatoes (you can keep the potato water if you don't want to make a very hearty soup with just cream, then mix 50% potato water and 50% cream).
Step 2
Sauté the mushrooms with the onion, adding salt and pepper (I used frozen wild mushrooms, but I've also made it with champignons).
Step 3
In a pot with the potatoes, add the sautéed mushrooms and onion, gradually pour in the cream, and blend everything until smooth (add salt and pepper if necessary).
Step 4
Bring the mixture to a boil. Garnish with herbs and mushrooms or croutons.
