Creamy Fig Ice Cream
Ingredients
- Butter 1 tablespoon
- Chopped almonds 0 oz
- Milk 1½ cups
- Egg white 4 pieces
- Sugar ¾ cup
- Salt a pinch
- 33% Cream 2 cups
- Fig 5 oz
- Vanilla salt 1 teaspoon
Step-by-Step Guide
Step 1
In a small skillet, melt the butter and add the almonds. Toast until golden brown and transfer to a paper towel.
Step 2
In a small saucepan, bring the milk to a boil over medium heat. Remove from heat.
Step 3
In a metal bowl, whisk the yolks, sugar, and salt until creamy. Gradually add the hot milk while whisking. Place the bowl over a water bath and continue whisking for another 8-10 minutes until the mixture thickens. Remove from heat and stir in the cream, pureed figs, vanilla, and almonds.
Step 4
Cool for 30 minutes, transfer to an ice cream maker, and freeze.
