Ingredients
- Poultry 20 oz
- Cauliflower 10 oz
- Onion 1 head
- Carrot 1 piece
- Spinach 5 oz
- Celery salt 1 piece
- Green Peas 5 oz
- Salt to taste
- Wheat Flour 2 tablespoons
- Butter 0 oz
- Cream 0 fl oz
- Whole egg 1 piece
- Herbs 1 bunch
Step-by-Step Guide
Step 1
Remove the chicken, separate the meat from the bones, and cut it into small pieces. Return it to the soup.
Step 2
Chop the cauliflower, onion, carrot, and celery, and add them to the broth. Cook for 30 minutes.
Step 3
Break the cauliflower into florets and add them to the soup.
Step 4
Add the green peas to the soup.
Step 5
Finely chop the spinach and sauté it with some broth.
Step 6
Sauté the flour and add it to the soup.
Step 7
Mix the raw yolk with the cream and salt, and cook in a water bath until thickened like sour cream.
Step 8
Add the sauce to the boiling chicken soup. Sprinkle with chopped herbs.
Step 9
Pour cold water over the chicken and bring to a boil. Skim off the foam, add salt, and cook for 1 hour.
