Creamy Celery Soup
Ingredients
- Celery stalk 10 oz
- Butter 0 oz
- Potato 5 oz
- Leek 2 pieces
- Chicken Broth 20 fl oz
- Celery salt ¼ teaspoon
- Cream 5 fl oz
- Milk 5 fl oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
In a small pot over low heat, melt the butter. Sauté the chopped celery, potato, and leeks for 15 minutes.
Step 2
Pour in the broth (it should be hot, you can prepare it from a cube), add the celery seeds and salt. Bring to a boil, cover, and simmer for 20–25 minutes.
Step 3
Blend the soup in a blender (you can do this in batches) and pour it back into the pot. Add the cream and milk. Bring to a boil.
Step 4
Before serving, garnish with chopped celery leaves.
