Creamy cauliflower soup with cheddar and dill
Ingredients
- Onion 1 head
- Vegetable Oil 1 teaspoon
- Garlic 2 cloves
- Milk ½ cup
- Chicken Broth 2½ cups
- Potato 1 piece
- Cauliflower 1 piece
- Chopped Green Onions 2 tablespoons
- White Cheddar Cheese 5 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Heat the vegetable oil in a small pot and add the finely chopped onion. Sauté for 5 minutes until soft, then add the minced garlic and cook for another minute.
Step 2
Pour in the broth and milk, add the peeled and diced potato, and the cauliflower broken into small florets. Bring to a boil, reduce the heat, cover, and simmer for 30 minutes until the cauliflower is tender.
Step 3
Remove from heat and blend with an immersion blender until smooth. Immediately add the grated cheese and stir until fully melted. Add the dill and serve.
