Description

The less water you use, the thicker the soup will be, so it's up to personal preference. You can add green onions while cooking. It can be served with walnuts and goat cheese or with croutons.

Ingredients

  • Broccoli 35 oz
  • Onion 1 head
  • Chicken Broth 0 qt
  • 10% cream 5 fl oz
  • Garlic 5 cloves
  • Ground Black Pepper to taste
  • Ocean salt to taste
  • Vegetable Oil 1 tablespoon

Step-by-Step Guide

Step 1

In a heavy-bottomed pot, sauté the onion until it is soft but not burnt, then add the garlic.

Step 2

Chop the broccoli (this step is optional) and add it to the pot.

Step 3

Season with salt and pepper.

Step 4

Sauté the broccoli with onion over low heat.

Step 5

Add hot chicken broth (from a cube) to the pot, 1 to 1.5 liters.

Step 6

Bring the mixture to a gentle boil over low heat.

Step 7

Remove from heat and blend the mixture with an immersion blender until smooth, then return to the heat.

Step 8

Heat the cream in a skillet and pour it into the soup, stirring well.
