Ingredients
- Butter 0 oz
- Onion 2 heads
- Broccoli 1 head
- Milk 25 fl oz
- Cream 10 fl oz
- Blue Cheese 5 oz
- Garlic 1 clove
Step-by-Step Guide
Step 1
Melt the butter in a large heavy-bottomed pot and sauté the onion until soft. Add the garlic and cook for another minute, then add the chopped broccoli and milk. Simmer for 30 minutes.
Step 2
Add more cream and blue cheese, season with salt and pepper. Cook for another 10 minutes, then transfer to a blender and blend until smooth.
Step 3
Serve with cream and pieces of blue cheese.
