Creamy Asparagus Soup
Ingredients
- Asparagus 1 bunch
- Onion 1 head
- Garlic 3 cloves
- Vegetable Broth 15 fl oz
- Wheat Flour 0 oz
- Soy Milk 20 fl oz
- Soy Sauce 2 tablespoons
- Dried Basil 2 teaspoons
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Cut the asparagus, leaving the tips. Place the asparagus, onion, garlic, and broth in a large pot.
Step 2
Bring to a boil. Then reduce the heat and simmer for 15 minutes or until the vegetables are tender.
Step 3
Transfer the contents of the pot to a blender. Add the flour, soy milk, soy sauce, and basil.
Step 4
Blend until smooth.
Step 5
Pour the soup back into the pot and add the asparagus tips.
Step 6
Cook over medium heat until the soup thickens and is heated through.
Step 7
Season to taste with salt and ground pepper. Serve hot.
