Ingredients

  • Celery salt 5 oz
  • Leek 5 oz
  • Butter 0 oz
  • Skin-On Chicken Breasts 15 oz
  • Goat cheese 5 oz
  • 10% cream 20 fl oz
  • Salt to taste
  • Chicken Broth 10 fl oz
  • Conference Pear 1 piece
  • Fresh Mint 4 sprigs
  • Green peppercorns 20 pieces
  • Olive Oil 2 tablespoons

Step-by-Step Guide

Step 1

In a mixture of oils, sauté finely chopped celery root for 1–2 minutes, add chicken breast and chopped leek, and lightly fry for 3–4 minutes.

Step 2

Pour in the chicken broth, bring to a boil, and simmer for 5 minutes.

Step 3

Add the cream, bring to a boil, and add the chopped cheese (100 grams), salt to taste. Cook while stirring constantly until thickened, about 5 minutes.

Step 4

Allow the mixture to cool slightly, blend it in a blender, and pour into bowls.

Step 5

Garnish with finely chopped pear (peeled and cored), pieces of cheese (40 grams), pink peppercorns, and mint.
