  • Semi-Smoked Sausage 7 pieces
  • Onion 1 head
  • Leek 15 oz
  • Salad Potatoes 3 pieces
  • Chicken Broth 0 qt
  • 10% cream 5 fl oz

Step-by-Step Guide

Step 1

In a pot, melt the butter and sauté 3 finely chopped pieces of bacon and finely chopped onion until golden. Add thinly sliced leeks and finely chopped potatoes, stir, reduce the heat, and cover with a lid. Cook for 5 minutes, shaking the pot occasionally.

Step 2

Pour in the broth and bring to a boil. Season with salt and pepper. Cover with a lid and simmer for 20 minutes until the vegetables are tender. Slightly cool and blend until smooth.

Step 3

Heat a pan well and fry the remaining bacon, cut into thin strips, until crispy.

Step 4

Return the soup to the pot and add the cream. Season with salt and pepper, gently heat, and serve in bowls, garnished with the crispy bacon.
