Description
A nostalgic recipe — who doesn't remember those little nut-shaped cookies (or wafers) filled with sweetened condensed milk that mom used to make for birthdays? We have grown up, but we still miss this simple dessert. Like Proust's madeleines, it takes us straight back to childhood. Alex Johnson has slightly adapted the recipe, preserving that same taste. He mixed the sweetened condensed milk with a cloud of cream, making the filling softer and enhancing the contrast with the crispy wafers. Additionally, he included a strawberry sauce to serve with the wafers. Sweetened condensed milk, strawberries, crispy wafer shells — an absolutely winning combination. The recipe was shared by Alex Johnson, chef at a popular American restaurant.
Ingredients
- Egg white 1 piece
- Sugar 0 oz
- Butter 0 oz
- Wheat Flour 0 oz
- Vegetable Oil 0 fl oz
- Sweetened Condensed Milk with Coffee 0 oz
- Heavy cream 0 fl oz
- Strawberry 5 oz
- Powdered Sugar 0 oz
- Chocolate 0 oz
Step-by-Step Guide
Step 1
Melt the butter in the microwave or in a water bath.
Step 2
In a deep bowl, combine the egg, sugar (42 g), melted butter, flour, and vegetable oil, and mix until smooth using a mixer.
Step 3
Let it rest, then bake in a waffle maker.
Step 4
Trim the edges and roll into tubes.
Step 5
Prepare the cream. Whip the cream with a mixer until thick.
Step 6
Add the sweetened condensed milk. Whip again.
Step 7
Place the strawberries in a saucepan and add sugar. Cook for 5 minutes over medium heat, stirring constantly.
Step 8
Remove from heat, cool, and blend with an immersion blender. Strain through a sieve.
Step 9
Melt the chocolate in a water bath.
Step 10
Fill the wafer tubes with cream, drizzle with chocolate, and sprinkle with powdered sugar.
Step 11
Serve with strawberry sauce.
