Cream-Filled Pastry Tubes
Ingredients
- Egg white 1 piece
- Water 0 fl oz
- Sugar 5 oz
- Egg white 2 pieces
- Puff Pastry 2 pieces
Step-by-Step Guide
Step 1
Roll each piece of puff pastry into a rectangle about 27–30 cm long.
Step 2
Cut into long strips about 2.5 cm wide.
Step 3
Cut triangles from parchment paper to form cones. These will be the future tips for the tubes.
Step 4
Wrap each strip around its cone, starting from the narrow end of the cone (the strips should overlap each other). Place on a baking sheet.
Step 5
Brush with beaten egg (yolk). Bake in a preheated oven at 355°F for 20–25 minutes.
Step 6
Prepare the meringue (Italian meringue). Heat water with sugar to a temperature of 245°F (or until a medium ball stage is reached). Whip the egg whites with a pinch of citric acid until stiff peaks form. Pour the syrup into the egg whites at high speed of the mixer. Whip until the meringue cools down.
Step 7
Transfer the meringue to a pastry bag and fill the tubes.
