Description

This quick-to-make rice side dish has a deep red color and a pleasant tart flavor. It is especially suitable for decorating a festive table and pairs well with poultry and meat dishes.

  • Basmati rice 10 oz
  • Salt ½ teaspoon
  • Orange juice concentrate 5 fl oz
  • Mustard Greens 1 tablespoon
  • Chicken Broth 3 cups
  • Dried cranberries with sugar 10 oz
  • Orange zest 0 oz

Step-by-Step Guide

Step 1

Bring the chicken broth to a boil, add the rice to the pot with the broth, season with salt, reduce the heat to the lowest setting, cover the pot with a lid, and simmer for 20 minutes until the rice absorbs all the liquid.

Step 2

Wash and sort the cranberries. Set aside a handful of berries for garnishing the dish, then bring the remaining cranberries to a boil in a saucepan with the orange juice, zest, and mustard. Simmer the mixture over low heat for 3 minutes, then combine it with the almost cooked rice and cook for another 2-3 minutes.

Step 3

Transfer the rice to well-greased molds, then serve on individual plates, garnished with thin strips of orange zest (zest from half an orange, grated) and cranberries. Serve immediately.
