Ingredients

  • Dried cranberries with sugar 20 oz
  • Orange juice concentrate 0 qt
  • Orange zest 1 piece
  • Cinnamon a pinch
  • Chicken Egg 1 piece
  • Wheat Flour 20 oz
  • Dry yeast 1½ teaspoons
  • Sugar 5 tablespoons
  • Salt 1½ teaspoons
  • Butter 0 oz
  • Whole egg 1 piece
  • Water 1 cup
  • Potato protein 1½ tablespoons

Step-by-Step Guide

Step 1

I make the dough in a bread maker. I add the yeast, pour in the water, crack in the egg, add the butter, sugar, salt, and flour. I set it to the 'dough' mode and forget about it for two and a half hours.

Step 2

For the filling, in a pot, pour in a cup of water, add 500 grams of sugar, and pour in the freshly squeezed orange juice. Bring to a boil.

Step 3

Add the cranberries, orange zest, and cinnamon. Cook over medium heat until the filling thickens. This takes about 40 minutes.

Step 4

Transfer the cranberries to a blender bowl. Lightly puree. Set aside to cool and thicken.

Step 5

Divide the dough depending on the size of the mold. I use a 26 cm springform pan. There will be more dough than needed for this mold and the amount of filling. But that's okay. You can make excellent sweet rolls from the leftover dough.

Step 6

Roll out part of the prepared dough. Place it in a floured mold.

Step 7

Carefully, holding the edges of the dough, place the filling inside the circle. It should resemble a volcano crater.

Step 8

From the remaining dough, make a lattice for the pie.

Step 9

If there is extra dough, roll it into buns.

Step 10

Cover the pastries with a towel and place them in a warm place for about 20–30 minutes. Watch how the dough rises. If it doesn't rise, it's not a problem. The oven will do its job.

Step 11

Preheat the oven to 355°F.

Step 12

Before placing in the oven, brush the product with egg yolk.

Step 13

Bake for about 20–25 minutes. Watch to ensure the top of the pie doesn't burn. If it starts to brown too much, cover it with foil and continue baking until done.
