
Cranberry Mousse with Semolina

Ingredients
- Dried cranberries with sugar 1 cup
- Sugar 1 cup
- Water 3.3 cups
- Semolina 3 tablespoons
Step-by-Step Guide
Step 1
In a saucepan, place the washed and sorted cranberries and mash them well with a wooden pestle, add 1/3 cup of boiled water and strain through cheesecloth. Place the resulting juice in a cool place.
Step 2
Pour the berry pulp with 3 cups of water and boil for 5 minutes, then strain and use the resulting broth to cook the semolina, gradually adding it to the boiling broth while stirring.
Step 3
After 20 minutes of slow boiling, add the sugar, bring the mixture to a boil, and remove from heat. Pour the previously strained juice into the cooked mixture and whisk until it reaches a thick foam. When the volume of the mixture doubles, pour it into cups and place in a cool place.
