Ingredients

  • Cranberry 10 oz
  • Water 5 fl oz
  • Whole egg 3 pieces
  • Whole egg 1 piece
  • Sugar 5 oz
  • Butter 0 oz

Step-by-Step Guide

Step 1

In a small saucepan (not aluminum), bring the berries and water to a boil, covering it with a lid. Cook until the berries burst and the liquid boils.

Step 2

Strain through a fine sieve, using a spoon to help. Allow to cool.

Step 3

Whisk the egg yolks and whole egg. Gradually add the sugar while whisking until the mixture turns light yellow.

Step 4

In the same non-aluminum saucepan, combine the egg mixture with the cranberry puree and whisk until smooth. Place over medium heat. Cook for 5–7 minutes, whisking, until the cream thickens (it should coat the back of a wooden spoon). Remove from heat, add the butter, and stir until smooth. Strain into a bowl or glass container. Cover the surface with plastic wrap. Refrigerate for at least 1 hour.
