Cranberry Biscuit Cookies

Ingredients

  • Sugar 5 oz
  • Wheat Flour 5 oz
  • Cranberry 5 oz
  • Farm fresh eggs 2 pieces
  • Baking Powder 1 teaspoon
  • Activated Baking Soda ½ teaspoon

Step-by-Step Guide

Step 1

Mash the cranberries into a puree or grind them through a meat grinder, or blend them. The mixture should be thick; if it's too runny, simmer it slightly.

Step 2

Separate the egg whites from the yolks. Whip the egg whites with half of the sugar until stiff peaks form. Whip the yolks with the remaining sugar and the crushed cranberries. Add the sifted flour, baking soda, baking powder, and mix the dough well. It should be thick. Add one-third of the whipped egg whites and gently fold it in. Then add the remaining egg whites and carefully mix the dough from the bottom up.

Step 3

Transfer the dough into a piping bag or a plastic bag (cut off a corner) and pipe small rounds onto a baking sheet lined with parchment paper. Decorate with cranberries and bake at 355°F for 12-15 minutes. Sprinkle the hot cookies with powdered sugar.
