Cranberry-Apple Pies

Ingredients

  • Wheat Flour 5 oz
  • Sugar 0 oz
  • Butter 5 oz
  • Salt a pinch
  • Water 0 fl oz
  • Cranberry 1 cup
  • Apple 1 piece
  • Ground Cinnamon to taste
  • Chicken Egg 1 piece

Step-by-Step Guide

Step 1

For the dough, mix the flour, 1 teaspoon of sugar, and salt. Add cold butter, cut into cubes, and use a fork to crumble the dough. Gradually add cold water in 2–3 portions, kneading until the dough comes together, stops crumbling, and becomes uniform in texture. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes to 1 hour.

Step 2

Meanwhile, prepare the filling: peel the apple and remove the core, then cut it into small cubes. Place the apple and cranberries in a saucepan, add 50 g of sugar and cinnamon, and heat until boiling. Reduce the heat to low and cook the filling for 15–20 minutes, stirring, until all excess liquid evaporates. The mixture should resemble thick jam.

Step 3

Roll out the cooled dough to a thickness of 3 mm, cut out an even number of round discs (two for each pie), and place half of them on a baking sheet lined with parchment paper. Brush each disc with lightly beaten egg, paying special attention to the edges. Distribute the filling over all the discs and cover with the second halves, pressing the edges well. Brush with egg and make cuts on top of the dough.

Step 4

Bake for the first 10 minutes at 355°F, then the remaining 10 minutes (or until done) at 390°F.
