Crackers with Poppy Seeds and Cheddar
Ingredients
- Wheat Flour ¾ cup
- Corn Flour for Polenta ¼ cup
- Poppy seed paste 1 tablespoon
- Salt ¼ teaspoon
- Baking Powder ¼ teaspoon
- Butter 5 oz
- Water 6 tablespoons
- Cheshire Cheese 5 oz
- Ocean salt to taste
- Chicken Egg 1 piece
Step-by-Step Guide
Step 1
Mix the wheat flour, corn flour, poppy seeds, salt, and baking powder.
Step 2
Chop the butter into small pieces, add the flour mixture, and knead the dough with your hands.
Step 3
Add the grated cheddar and 4 tablespoons of cold water. Mix well with a fork. If the dough is too dry, add another tablespoon of cold water.
Step 4
Place the dough on a work surface and roll it out. Fold it in half and roll it out again. Repeat several times. Roll it out into a thin layer and cut it into 2 pieces. Then wrap each piece of dough in plastic wrap and chill for about 1 hour.
Step 5
Preheat the oven to 390°F.
Step 6
Place the dough on a floured surface. Use a knife or cookie cutter to cut out many moon-shaped crackers. Transfer to parchment paper. Roll out the scraps again.
Step 7
Lightly beat the egg with 1 tablespoon of warm water.
Step 8
Brush the crackers with the egg mixture, poke holes in several places with a fork, and sprinkle with coarse salt.
Step 9
Bake until golden brown for 12-14 minutes. Cool. Bake the remaining crackers, chilling the baking sheet each time.
