Cottage Cheese Soufflé with Raspberry Sauce
Ingredients
- Sugar 1 cup
- Semi-soft cream cheese 25 oz
- Farm fresh eggs 6 pieces
- Gelatin 0 oz
- Vanilla salt 2 tablespoons
- 10% cream 5 fl oz
- Raspberry leaves 5 oz
- Milk ½ cup
- Powdered Sugar 2 tablespoons
Step-by-Step Guide
Step 1
Soak the gelatin in half a cup of milk and let it sit for 30 minutes.
Step 2
Whip the egg whites and place them in the refrigerator.
Step 3
Chill the cottage cheese.
Step 4
Whip the cream with half a cup of sugar and chill.
Step 5
Heat the milk until the gelatin dissolves.
Step 6
Mix the milk with the egg yolks, vanilla sugar, and half a cup of sugar. Place over a water bath and whisk with a mixer until a fluffy cream forms. Cool to room temperature.
Step 7
Combine the egg yolk cream, cottage cheese, whipped cream, and whipped egg whites. Refrigerate overnight.
Step 8
Pass the raspberries through a sieve. Mix with powdered sugar.
Step 9
Remove the dessert from the refrigerator. Spoon onto a plate and drizzle with raspberry sauce.
