Description

Rings made from choux pastry filled with cottage cheese cream — a Russian twist on the classic French éclair, which is usually prepared with cream and is famous as the dessert 'Paris-Brest'. However, with cottage cheese, it somehow tastes better and feels more familiar.

  • Butter 5 oz
  • Wheat Flour 10 oz
  • Chicken Egg 8 pieces

  • Cottage cheese 20 oz
  • 33% Cream 10 fl oz
  • Powdered Sugar 0 oz

Prepare the necessary ingredients.

In a small saucepan, combine the milk and water. Add the butter, 5 grams of salt, and 10 grams of sugar.

Place over heat and bring to a boil. As soon as the mixture starts boiling, add the flour and begin to stir vigorously with a wooden spatula, keeping the saucepan on the heat for another 5 minutes.

Transfer the dough to a mixer and gradually incorporate the room temperature eggs one at a time. The result should be a smooth batter that flows slowly off the spatula.

Transfer the dough to a piping bag.

Pipe the rings onto a baking sheet lined with parchment paper or, even better, a perforated baking mat.
