  • Cottage cheese 20 oz
  • Sugar ½ cup
  • Farm fresh eggs 4 pieces
  • Candied fruits 5 oz
  • Semolina 2 tablespoons
  • Raisins 0 oz
  • Butter 3 tablespoons
  • Orange zest 1 teaspoon

Step-by-Step Guide

Step 1

Pass the cottage cheese through a sieve, add the egg yolks, sugar, ¼ teaspoon of salt, orange zest, semolina, and pour in the melted butter. Whip this mixture with a wooden spatula.

Step 2

Then gently fold in the cleaned and rinsed raisins, the candied fruits cut into small cubes, and the egg whites whipped to a thick foam.

Step 3

Transfer the cottage cheese mixture to a mold greased with butter and sprinkled with sugar, and steam or bake in the oven (in the latter case, sprinkle the mold with crushed breadcrumbs instead of sugar). Serve the pudding hot, with fruit syrup or jam.
