Description
If baked for less time, the cookies will be soft. If kept for up to 15 minutes, they will be crunchier. Use cottage cheese with a medium fat content of 1.8%, 5%, or 9% and not too crumbly.
Ingredients
- Butter 5 oz
- Cottage cheese 5 oz
- Wheat Flour 5 oz
- Brown Sugar 5 oz
- Activated Baking Soda ½ teaspoon
- Salt a pinch
- Vanillin ¼ teaspoon
Step-by-Step Guide
Step 1
Preheat the oven to 355°F (mark 5).
Step 2
Mix the flour with baking soda, a pinch of salt, and vanillin.
Step 3
Add the softened room temperature butter to the mixture and blend using a mixer. Then add the cottage cheese and mix well (you can also use a mixer). Knead the dough.
Step 4
Roll out the dough to a thickness of 0.5 mm. Cut out circles with a diameter of 8 cm.
Step 5
Take a large plate and pour the sugar onto it. Dip each dough circle in sugar on one side, then fold it in half with the sugar side inside, then dip one of the sides in sugar again and fold it in half with the sugar inside. This creates a pocket. Roll one side in sugar and leave the other side untouched.
Step 6
Transfer the prepared cookie pockets to a baking sheet lined with parchment paper, ensuring the sugar side is facing up. Bake for 10-12 minutes until the cookies are golden brown.
