Description

It is better to use homemade crumbly cottage cheese. Instead of raisins, you can add dried fruits to taste. Adjust the amount of starch as needed. If the cottage cheese mixture is too runny, add more starch and/or do not add the egg whites. If it is too dry, add more eggs.

  • Wheat Flour 2 cups
  • Cocoa Powder 2 tablespoons
  • Butter 10 oz
  • Sugar 15 oz
  • Activated Baking Soda 2 teaspoons
  • Dry Curd 0 lbs
  • Lemon 1 piece
  • Chocolate eggs 7 pieces
  • Potato protein 2½ tablespoons
  • Vanilla salt to taste
  • Raisins to taste

Step-by-Step Guide

Step 1

Knead the dough from flour, cocoa, 200 g of butter, 100 g of sugar, 3 egg yolks, and baking soda. Form into a ball and place in the freezer.

Step 2

For the filling, pass the cottage cheese through a meat grinder with the lemon (whole, but it is better to remove the seeds), mix in about 300 g of sugar (it is better to taste and adjust the sugar to your liking), 4 eggs, 3 whipped egg whites, 100 g of softened butter, starch, vanilla, and raisins.

Step 3

Grate most of the dough, which has become firm and suitable for grating, on a coarse grater onto a baking sheet lined with parchment paper. This is the base of the pie. Smooth it out. Spread the cottage cheese filling on top. Then sprinkle the remaining grated dough on top.

Step 4

Bake for 40–45 minutes at medium heat. Check for readiness.
