
Cottage Cheese Pie with Candied Fruits

Description
This is an extraordinarily light and delicious dish. I prepare it for guests as well as for breakfast, instead of a traditional sandwich. You can also drizzle it with blueberry jam or any other jam you have in the fridge.
Ingredients
- Semi-soft cream cheese 15 oz
- Self-rising flour 5 oz
- Chicken Egg 2 pieces
- Raisins 5 oz
- Ground Almonds 1 tablespoon
- Candied Lemon Peel 0 oz
- Sugar 4 spoons
- Vanillin a pinch
- Butter 0 oz
- Salt to taste
- Powdered Sugar 3 spoons
Step-by-Step Guide
Step 1
Whisk the egg whites until frothy.
Step 2
In a separate bowl, mix the cottage cheese (I used 2% Farmer's cheese, but you can use any 5% cheese, as long as it's soft), egg yolks, salt, and sugar, then add vanilla. Blend everything together with a mixer. Add finely chopped almonds, citrus zest, raisins, or any candied fruits, and mix thoroughly again.
Step 3
Gradually add the sifted flour mixed with baking powder to the bowl.
Step 4
Gently fold the whipped egg whites into the cheese mixture.
Step 5
Preheat the oven to 375°F. Take a baking dish, grease the bottom and sides with butter, add the cottage cheese mixture, and place it in the oven to bake.
Step 6
Bake until the pie is puffed and golden brown. The approximate baking time is 40 minutes. You can check for doneness by inserting a thin knife; nothing should stick to it.
Step 7
Then remove the pie from the mold, gently shake it to loosen it, turn it over, and dust with powdered sugar.
