Cottage Cheese Muffins with Banana and Kiwi
Ingredients
- Cottage cheese 5 oz
- Sugar 5 oz
- Egg white 1 piece
- Butter 0 oz
- Wheat Flour 5 oz
- Bananas 3 pieces
- Kiwi 2 pieces
- Vanillin a pinch
- Baking Powder 1 teaspoon
- Powdered Sugar to taste
Step-by-Step Guide
Step 1
Beat the eggs with sugar until frothy.
Step 2
In a separate bowl, mix the cottage cheese and softened butter.
Step 3
While continuing to mix, add the cottage cheese and butter mixture to the beaten eggs. Mix thoroughly.
Step 4
Add vanillin and baking powder. Stir.
Step 5
Add the flour. Knead the dough with a mixer.
Step 6
Peel the banana and kiwi. Cut into small cubes. Add to the mixture and stir.
Step 7
Spoon the batter into greased muffin tins or lined with parchment paper. I made 10 muffins.
Step 8
Bake in a preheated oven at 375°F for about 30–35 minutes. Check readiness with a toothpick.
