Cottage Cheese Lemon Cookies
Ingredients
- Cottage cheese 5 oz
- Sugar 0 oz
- Whole egg 1 piece
- Butter 0 oz
- Honey 0 oz
- Vanillin a pinch
- Wheat Flour 5 oz
- Baking Powder 0 oz
- Citrus Zest Mix to taste
- Powdered Sugar 0 oz
Step-by-Step Guide
Step 1
Mix the cottage cheese, granulated sugar or powdered sugar, and egg yolk.
Step 2
Separately melt the butter and add it (not hot) to the other ingredients. Also add a teaspoon of liquid honey (if it's thick, warm it slightly in a water bath) and a few drops of vanilla extract (or a little vanillin, be careful with it as it can be bitter).
Step 3
Mix everything well into a homogeneous mass. Then add the pre-sifted flour mixed with baking powder. Mix on low speed. Now place the dough on a work surface, add the zest of a third of a lemon, and knead well with your hands.
Step 4
Roll the dough into a log and divide it into 16 equal parts. Roll each part into a ball and place them on a baking sheet lined with parchment paper or greased with oil. You can flatten the balls to make them into discs.
Step 5
Place the baking sheet in a preheated oven at 180-390°F. Bake for 10-15 minutes until the cookies are evenly golden. Baking time depends on the size of the cookies.
Step 6
In a separate bowl, mix two tablespoons of powdered sugar with a third of a tablespoon of water. Add the water gradually to ensure the glaze is not too runny. It should be fluid but thick.
Step 7
Place the glaze in a plastic bag or a parchment cone, cut off the tip, and pipe a pattern onto the cooled cookies. Allow the glaze to dry and serve.
