Description
Instead of fresh yeast, you can use 2 teaspoons of instant dry yeast. This recipe was originally intended for a bread machine. To prepare it in a bread machine, reduce the amount of ingredients by half.
Ingredients
- Egg white 4 pieces
- Butter 5 oz
- Cottage cheese 5 oz
- Milk 10 fl oz
- Sugar 5 oz
- Salt 1 teaspoon
- Wheat Flour 25 oz
- Dry yeast 0 oz
- Raisins 5 oz
- Vinegar essence to taste
Step-by-Step Guide
Step 1
In a small bowl, place the fresh yeast, mix with three tablespoons of flour, and add 1/3 cup of warm milk. Stir to avoid lumps. After 15 minutes, ensure that the yeast is working well; the mixture should have risen into a fluffy 'cap'.
Step 2
In a large bowl, sift the flour. Add salt, the remaining sugar, lightly beaten eggs, strained cottage cheese, the remaining milk, softened butter, vanilla essence, and the yeast mixture. Knead the dough by hand for about 5-7 minutes. Then add the dry raisins and knead for another five minutes. The dough will not form a ball and will spread across the bottom of the bowl. It will stick to your hands, so clean your hands thoroughly and place the bowl with the dough in a warm place to rise. Alternatively, place the dough in a basin of warm water and cover with a towel. The dough will rise for 2 hours and will increase in volume by almost 3 times!
Step 3
Grease the molds with refined vegetable oil and dust with semolina. Divide the dough among the molds. Preheat the oven to 50°C (122°F). Place the molds with the dough inside for rising. Heat the oven and then turn it off. After half an hour, the dough will have risen. Remove it.
Step 4
Preheat the oven to 180°C (356°F). Carefully place the molds on the rack closer to the bottom for 30 minutes. After half an hour, the tops of the kulich will be beautifully browned. Cover the kulich with foil to prevent the tops from burning. Leave in the oven for another 10 minutes.
Step 5
Carefully remove from the molds and place on a rack to cool. While warm, cover the kulich with icing.
