Ingredients
- Cottage cheese 5 oz
- Butter 5 oz
- Chicken Egg 1 piece
- Wheat Flour 5 oz
- Salt 0 oz
- Sugar 5 oz
Step-by-Step Guide
Step 1
Mash the cottage cheese (preferably soft and medium-fat) with a fork, add softened butter, egg yolk, salt, and then flour. Knead a pliable but not too stiff dough. Refrigerate for 30 minutes. Proper cooling makes for more tender and fluffy cookies.
Step 2
Beat the egg white with sugar; if you don't achieve 'stiff peaks', don't worry, they won't be needed.
Step 3
Preheat the oven to 375°F. Divide the dough into two parts, rolling each into a rectangle about half a centimeter thick.
Step 4
Spread half of the egg white mixture with sugar on the rectangle (optional: sprinkle with cinnamon), and roll it up along the long side. Cut the roll into small pieces and place them on a baking sheet, cut side up, leaving 3–4 cm between the cookies. Bake for about 20 minutes until golden.
Step 5
Sprinkle the cooled cookies with powdered sugar.
