Cottage Cheese Cheesecake with Raspberries
Ingredients
- Cottage cheese 20 oz
- Farm fresh eggs 3 pieces
- Sugar 1 cup
- Baking Powder 1 teaspoon
- Vanilla salt 1 teaspoon
- Sour Cream 4 tablespoons
- Butter 5 oz
- Wheat Flour 1½ cups
- Liquid dark chocolate 5 oz
- Raspberry leaves 5 oz
- Brown Sugar 3 tablespoons
Step-by-Step Guide
Step 1
Mix the flour, butter, baking powder, and half a cup of sugar until crumbly.
Step 2
In another bowl, combine the cottage cheese, eggs, half a cup of sugar, and vanilla sugar.
Step 3
In a baking dish (I used a springform pan - 21 cm in diameter), layer 1/3 of the dry mixture, pour half of the cottage cheese mixture on top, add half of the berries, then another layer of dry mixture, cottage cheese mixture, berries, and finish with the remaining dry mixture.
Step 4
Bake in a preheated oven at 355°F for 1 hour.
Step 5
Let cool, then spread the sour cream mixture (whip the sour cream with 3 tablespoons of brown sugar) on top. Melt the chocolate and decorate the cake.
Step 6
It is recommended to let the cake chill in the refrigerator overnight.
