
Cottage Cheese Casserole with Pears

Description
This casserole is best served warm with sour cream or crème anglaise.
Ingredients
- Pears 3 pieces
- Citrus Zest Mix 1 piece
- Sugar ½ cup
- Honey 2½ tablespoons
- Farm fresh eggs 4 pieces
- Vanilla extract 1 teaspoon
- Cottage cheese 15 oz
- Semolina ½ cup
- Baking Powder 1 teaspoon
- Salt a pinch
- Meyer Lemon Juice 1 teaspoon
- Activated Baking Soda ½ teaspoon
- Clarified Butter 0 oz
Step-by-Step Guide
Step 1
In a large bowl, place the sugar and lemon zest, and rub them together with your hands until the sugar becomes moist and fragrant. Then add the egg yolks and beat with a mixer until the mixture thickens and turns light in color (about 5 minutes). Add the vanilla extract, then the cottage cheese passed through a sieve, and the semolina. Mix everything well and set aside.
Step 2
Peel the pears, remove the core, and slice them thinly. Cover with a damp towel and set aside.
Step 3
In a small bowl, beat the egg whites with salt and lemon juice until stiff peaks form.
Step 4
Add the baking powder and baking soda to the cottage cheese mixture, beat, then fold in the egg whites and mix.
Step 5
Grease a silicone baking mold with butter (if using a metal mold, sprinkle it with semolina or flour), layer some of the cottage cheese mixture, then the pears, and top with the remaining mixture.
Step 6
Bake for about 45 minutes until golden brown at a temperature of 375°F.
