Cottage Cheese Casserole with Coconut and Peaches
Ingredients
- Cottage cheese 20 oz
- Butter 5 oz
- Milk 5 fl oz
- Desiccated coconut 1 cup
- Shortbread Cookies 10 oz
- Canned Peaches 20 oz
- Sugar 5 oz
- Farm fresh eggs 3 pieces
Step-by-Step Guide
Step 1
Crush the cookies in a blender. Add melted butter.
Step 2
Grease the molds with butter. Place the cookie base at the bottom.
Step 3
Put in the refrigerator for 30 minutes.
Step 4
In a blender, combine cottage cheese, milk, and sugar.
Step 5
Blend until smooth.
Step 6
In three additions, add the shredded coconut and eggs. The mixture should be completely homogeneous.
Step 7
Spread half of the cottage cheese mixture over the cooled cookie base.
Step 8
Top with sliced peaches.
Step 9
Then pour the remaining cottage cheese mixture. Bake for 1 hour at 165°C.
Step 10
I placed a container of water at the bottom of the oven. Allow the casserole to cool completely in the refrigerator (preferably overnight).
