Cottage Cheese Blancmange
Ingredients
- Cottage cheese 20 oz
- 30% Cream 10 oz
- Sugar 5 oz
- Gelatin 3 tablespoons
- Milk 1 cup
- Fruits to taste
- Fresh Berries to taste
Step-by-Step Guide
Step 1
Soak the gelatin in milk until it swells. Then place it over low heat and dissolve the swollen gelatin in the milk at a low temperature (do not bring to a boil). Leave to cool.
Step 2
Pass the cottage cheese through a fine sieve or blend it in a blender to eliminate lumps. Add sugar and cream. Gradually pour in the gelatin. Mix thoroughly.
Step 3
Pour the resulting cottage cheese mixture into molds, but not to the top.
Step 4
Carefully place the filling into the molds with the cottage cheese mixture: pieces of your favorite fruits or berries. Do not mix. The filling should not 'peek' out of the mixture. Reserve some filling for decoration.
Step 5
Place in the refrigerator until set.
Step 6
Invert the molds and place the dessert onto plates (to ease the release of the dessert from the molds, you can dip the bottom part in hot water for a few seconds). Decorate with the remaining filling, a mint leaf, or drizzle with syrup.
