Galettes are not just dry cookies that can break your teeth, but also a traditional French type of pastry. Here’s a nice recipe by Emily Johnson — cottage cheese banana galettes made with two types of flour and cocoa.
Ingredients
- Cottage cheese 15 oz
- Rice Flour 5 oz
- Whole Wheat Flour 5 oz
- Eggs 2 pieces
- Cocoa Powder 2 teaspoons
- Egg yolks 2 pieces
- Stevia Extract to taste
- Vanillin a pinch
- Bananas 2 pieces
- Cinnamon 1 teaspoon
Step-by-Step Guide
Step 1
Mash 200 grams of cottage cheese with a fork, beat in 2 eggs, add sweetener, and mix well.
Step 2
Combine both types of flour with cocoa, then add to the cottage cheese mixture.
Step 3
Knead the dough, roll it into a ball, and place it in a bag in the refrigerator for 30 minutes.
Step 4
For the filling: Mash 200 grams of cottage cheese with a fork, beat in 2 egg yolks, add sweetener and vanillin, and mix well.
Step 5
Divide the dough and filling into 2 parts.
Step 6
Roll the dough into 2 circles, place 1/2 of the filling on each, leaving 2 cm at the edges.
Step 7
Top with sliced bananas, fold the free edges over, and sprinkle with cinnamon.
Step 8
Bake in a preheated oven at 390°F for 30-40 minutes.
