Cottage Cheese and Honey Soufflé with Berries
Ingredients
- Egg white 8 pieces
- Semi-soft cream cheese 35 oz
- Honey 15 fl oz
- Vanillin a pinch
- Gelatin 0 oz
- Dried cranberries with sugar 0 oz
- Frozen black currant puree 0 oz
- Dr. Oetker Cake Jelly 0 oz
- Concentrated Cranberry Juice 0 fl oz
- Sugar 2 tablespoons
Step-by-Step Guide
Step 1
Mix the cottage cheese with honey and gently whip.
Step 2
Soak the gelatin sheets in a small amount of water, let it steep, and heat over low heat until completely dissolved. Remove from heat, let it cool slightly but do not let it set! Gently fold into the cottage cheese and honey mixture.
Step 3
Whip the egg whites until stiff peaks form, and carefully fold them into the cottage cheese mixture, mixing gently, then add vanillin.
Step 4
Pour the cottage cheese mixture into a metal springform pan. Smooth the surface. Place in the refrigerator until fully set (about 3-4 hours). Remove from the refrigerator and carefully distribute the berries over the surface.
Step 5
Mix Dr.Oetker gelatin with sugar, add cranberry juice and a little water (about 50-60 ml), heat to about 140°F, let it cool slightly, and carefully pour over the berry layer. Return to the refrigerator for another couple of hours.
