Description

The pie turns out to be very LARGE, suitable for a big family. If necessary, you can halve the ingredients. The sides of the baking dish should be high — at least 6 cm. My dish measures 27x37x6 cm.

Ingredients

  • Butter 5 oz
  • Wheat Flour 10 oz
  • Sugar 10 oz
  • Chocolate eggs 6 pieces
  • Sour Cream 5 oz
  • Cottage cheese 30 oz
  • Citrus Zest Mix 1 tablespoon
  • Apple 2 pieces

Step-by-Step Guide

Step 1

For the dough, mix in a bowl (with hands/fork) 120 g of softened butter, 240 g of flour, and 50 g of sugar until crumbly. Refrigerate.

Step 2

For the filling, separate 6 eggs into yolks and whites. Beat the yolks with a mixer and 300 g of sugar until fluffy and light yellow. Add 200 g of sour cream and mix. Then add the zest of half a lemon (or orange — whichever you have). Next, add 800 g of cottage cheese and mix well. Grate 2 peeled and cored small apples on a fine grater and mix with 2 tablespoons of flour. Combine this with the cottage cheese mixture. Whip the egg whites until stiff peaks form. Gently fold the egg whites into the cottage cheese mixture using careful upward motions.

Step 3

Place half of the crumbs in the baking dish. Press the crumbs down to form a base. Spread the cottage cheese mixture over the crumbs. Sprinkle the remaining crumbs on top. Bake in the oven at 390°F for 40 minutes until the crumbs are golden. The center of the pie should still jiggle slightly. Leave to cool completely. You can do this in the cooling oven or overnight. Cut into squares and serve with tea.
