Description

Makes about 12 small cookies with a crispy crust but soft inside.

Ingredients

  • Coarse Cornmeal 5 oz
  • Okara 5 oz
  • Honey 0 oz
  • Vegetable Oil 2 teaspoons
  • Vanillin to taste

Step-by-Step Guide

Step 1

Mash the okara with the cornmeal and spices. You should get a crumbly mixture. Add honey (you can substitute with sugar) and oil (pumpkin, olive, etc. can be used). Knead with your hands until a homogeneous mass is formed. If the dough is too crumbly, add a little water as needed.

Step 2

Form small balls from the dough and slightly flatten them on top.

Step 3

Preheat the oven to 340°F. Place on a baking sheet lined with parchment paper. Bake for 25–30 minutes.
