Cornbread with Herbs and Garlic
Ingredients
- Butter 5 oz
- All-purpose flour 5 oz
- Cornmeal for polenta 15 oz
- Baking Powder 2 teaspoons
- Ground chili pepper ½ teaspoon
- Eggs 3 pieces
- Milk 5 fl oz
- Chopped Parsley 2 tablespoons
- Chives 2 tablespoons
- Garlic 3 cloves
- Salt to taste
Step-by-Step Guide
Step 1
Mix the flour, baking powder, and chili. Add the polenta (finely ground cornmeal) and mix well.
Step 2
Make a well in the center, add 90 g of melted butter, lightly beaten eggs, and milk, and mix everything together.
Step 3
Grease a loaf pan (mine is 25*13 cm) with butter and line it with parchment paper.
Step 4
Pour the mixture into the pan. Bake for 45 minutes in a preheated oven at 355°F. Remove the bread to a rack and cool for at least 10 minutes.
Step 5
Prepare the herb and garlic butter: mix softened butter, parsley, chives, crushed garlic, and salt.
Step 6
Using a sharp knife, slice the bread, spread it with the butter, and bake for another 5 minutes. Enjoy your meal!
