Corn Pancakes with Blueberries
Ingredients
- Wheat Flour 1 cup
- Coarse Cornmeal ½ cup
- Sugar ¼ cup
- Baking Powder 1½ teaspoons
- Coarse Salt 1 teaspoon
- Buttermilk 1½ cups
- Milk ¼ cup
- Activated Baking Soda ½ teaspoon
- Butter 5 tablespoons
- Egg white 1 piece
- Fresh Berries 2 cups
- Maple syrup to taste
Step-by-Step Guide
Step 1
In a bowl, mix both flours, 2 tablespoons of sugar, baking powder, salt, and baking soda. In another bowl, whisk together buttermilk, milk, 3 tablespoons of softened butter, and the egg. Combine both mixtures and mix well (the batter will be slightly lumpy).
Step 2
In a bowl, mix the berries with the remaining sugar.
Step 3
Heat a griddle over medium heat. Add a little butter. Pour about 0.3 cup of batter and sprinkle with 2 tablespoons of berries. Cook for 3–4 minutes, flip, and cook for another 2 minutes. Repeat the same with the remaining batter and berries, adding butter as needed.
Step 4
Serve with maple syrup.
