Corn Muffins with Pear and Caramelized Ginger
Ingredients
- Wheat Flour 4 cups
- Vegetable Oil to taste
- Coarse Cornmeal 1 cup
- Oat flakes ½ cup
- Baking Powder 3 tablespoons
- Sugar 1¼ cups
- Pears 2 pieces
- Candied fruits 0 oz
- Vegetable Oil 1 cup
- Large eggs 3 pieces
- Applesauce 2 tablespoons
- Dessert Yogurt 1¼ cups
- Butter 5 oz
Step-by-Step Guide
Step 1
Remove the cores from the pears and chop them into small cubes. Chop the ginger into small pieces.
Step 2
Preheat the oven to 355°F (350 degrees Fahrenheit). Grease a muffin tin with vegetable oil.
Step 3
In a large bowl, mix the three types of flour and baking powder. Then add the sugar and stir.
Step 4
Add the pears to the dry mixture, reserving 3 tablespoons for decoration, along with ½ cup of ginger.
Step 5
In a small bowl, whisk the eggs, canola oil, yogurt, and applesauce. Then combine with the dry mixture and softened butter.
Step 6
Fill the muffin cups two-thirds full with the batter. Top with the reserved pears and ginger.
Step 7
Bake in the oven for 30 minutes until done. Cool for 15 minutes and serve.
