Ingredients
- Corn Flour for Polenta 10 oz
- Sugar 10 oz
- Milk 15 fl oz
- Olive Oil 5 fl oz
- Chocolate eggs 3 pieces
- Baking Powder 1 tablespoon
- Vanilla salt to taste
- Salt a pinch
Step-by-Step Guide
Step 1
Preheat the oven to 355°F. Grease the muffin pan with oil and dust with corn flour.
Step 2
Mix the sifted fine flour, sugar, vanilla, milk, oil, and salt. Place the mixture over high heat, stirring until it comes to a boil. Once it boils, reduce the heat to the minimum.
Step 3
Cook the mixture, stirring vigorously in a clockwise direction or in a figure-eight pattern, until it thickens. The consistency should be similar to cornmeal or semolina porridge. Swirls should remain when you turn the spoon.
Step 4
Remove the mixture from the heat, transfer it to a deep container, and let it cool. Add the large eggs one at a time, beating with a mixer on low speed after each addition. Add the baking powder and mix.
Step 5
Pour the batter into the pan and bake for 40–45 minutes until done. Dust the finished muffin with powdered sugar.
