  • Wheat Flour 2½ cups
  • Candied fruits 5 oz

  • Activated Baking Soda 2 teaspoons
  • Butter 5 oz
  • Brown Sugar ½ cup
  • Fine white sugar ½ cup
  • Black licorice ¼ cup
  • Egg white 1 piece
  • Grated Ginger Root 1½ teaspoons
  • Ground Cinnamon 1 teaspoon
  • Grated Ginger Root 1½ teaspoons
  • Ground clove ½ teaspoon
  • Sugar 0.3 cups

Step-by-Step Guide

Step 1

Preheat the oven to 355°F. Line 2 baking sheets with parchment paper. In a food processor, grind the candied ginger until it becomes a paste or pass it through a meat grinder, then transfer to a bowl. Add the flour, baking soda, and 0.25 teaspoons of salt.

Step 2

Using a mixer, beat the butter until creamy, about 2 minutes. Gradually add both types of brown sugar. Beat for another 3 minutes until creamy. Add the egg, treacle, fresh ginger, ground ginger, cinnamon, and cloves. Mix well and gradually incorporate the flour mixture.

Step 3

In a small bowl, pour the white sugar. Take 1 tablespoon of dough and roll it into balls. Roll the balls in sugar on all sides and place them on the baking sheet.

Step 4

Bake the cookies for about 15 minutes until the edges are crispy and the center remains soft. Cool on the baking sheet.
