  • Persimmon 2 pieces
  • Wheat Flour 2 cups
  • Sugar 1 cup
  • Chicken Egg 1 piece
  • Baking Powder 1½ teaspoons
  • Cinnamon ½ teaspoon
  • Ground Nutmeg a pinch
  • Butter 5 oz
  • Walnuts 5 oz

Step-by-Step Guide

Step 1

Wash the persimmons, cut them in half, carefully scoop out the flesh with a spoon, and remove all the seeds. Mash the flesh with a fork or blend it in a food processor. Mix the flour with the baking powder and add the spices — cinnamon and nutmeg. Chop the butter into pieces and beat it together with the sugar and egg. Add the persimmon puree to the butter mixture and mix thoroughly.

Step 2

Finely chop the walnuts with a knife or in a food processor. Add the flour and walnuts to the mixture of butter, sugar, and persimmon. Mix everything together.

Step 3

Preheat the oven to 355°F. Place a sheet of parchment paper on a baking tray. Put the dough into a piping bag and pipe neat circles onto the baking tray. Bake the cookies in the oven for 15 minutes.
