- Beef Shank 1 piece
- Beef 20 oz
- Carrot 5 oz
- Turnips 5 oz
- Onion 1 head
- Leek 1 piece
- Celery stalk 1 stalk
- Egg white 2 pieces
- Clove 2 pieces
- Salt to taste
Step-by-Step Guide
Step 1
Cut the meat into small pieces. Slice the carrot and turnip. Cut the onion in half, and split the leek lengthwise.
Step 2
Place the shank and beef in a large pot, add two liters of water, and bring to a boil. Reduce the heat and simmer for 30 minutes. Skim off the foam, add the carrot, turnip, onion, leek, celery, and cloves, and season with salt. Bring to a boil again, then simmer on low heat, stirring occasionally, for 1.5 hours. Twice during this time, add 2 tablespoons of cold water and remove any foam that forms.
Step 3
Whisk the egg whites, then transfer them to a saucepan. Slowly pour in the broth along with the vegetables and pieces of meat, stirring everything with a wooden spatula. Cook for 20 minutes. Strain through a sieve, then again through cheesecloth. Season with salt to taste. Serve in individual bowls.
